A non-headed cabbage, kale is one of the most cold-resistant vegetables. While all others fail in the ground in snowy December, one may still pick kale leaves for their Christmas meal. Moreover, kale becomes sweeter after frost. Note: curly kale is more ornamental than plain-leaf kale (Lacinato Kale), but it is slightly difficult to clean due to the wrinkles.
